Frozen eggs can be used for various purposes as they are safe and healthy to use. If you are going to freeze the eggs with shells, keep in mind that shells should not be broken accidentally otherwise they will no longer be used. It is recommended to use frozen eggs within 4 months.

To use a frozen egg, simply take out the amount of individually frozen eggs that you want from your freezer bag, then put them into a cup (or bowl) and leave them overnight in the fridge to thaw. If you wish to defrost an egg, transfer it overnight from freezer to fridge to avoid getting bacteria on it. To use frozen eggs, remove the amount you need from the eggs and let it thaw overnight in a bowl in the fridge. If you must use eggs individually, be sure to separate each egg into separate bowls.

Hard-boiled eggs should never be frozen, because the freezing and thawing process changes their texture too drastically. You can poach the eggs without cracking after thawing them, but the yolks texture is altered in the thawing process, so stick to the hard-boiled eggs that you can slice into a salad, rather than soft-boiled eggs. It is best to avoid freezing whole, hard-boiled eggs, as well as the whites, as these will get stiff and watery once frozen.

Egg yolks that are frozen separately from the whites may develop unusual textures when they are not prepared for freezing correctly. You can also freeze only the whites of the eggs, or only the yolks, if you prefer, but the yolks will not handle being frozen very well, taking on a syrupy, gelatinous texture. If the egg does not break when frozen, and if the whites and yolks are not a good match once frozen that way, then restrict use. If the shell breaks, bacteria may be trapped inside the entire egg, making it unsafe to eat, even if you prepare it after thawing.

Eggs contain water, and because water expands when frozen, freezing an uncooked egg could crack the shell. When eggs are frozen, the liquid within expands, which causes the shell to break, and the yolk to turn thick and syrupy. Freezing unshelled eggs can have an adverse effect on the texture, since the yolk becomes dense and gel-like. The gelling properties of the yolks of eggs make them thicken or gel during freezing, which is why it is necessary to treat the yolks specifically.

Freeze only egg yolks until solid, at which time you can transfer the yolks into another freezer-safe container as needed. Once you are ready to freeze the egg yolks, whites, or the mixture of eggs, transfer your yolks into a clean, freezer-safe container, making sure that clean has a tight-fitting lid.
