Can Cornmeal Go Bad?

Cornmeal can go bad but the time frame varies depending on the type as well as its storage conditions. If the cornmeal is whole grain, it can go well for up to several months past the date while the degerminated one can be kept for a year if stored at room temperature.

Like some other foodstuffs, cornmeal will eventually spoil. Like other foodstuffs, cornmeal deteriorates over time and its quality deteriorates, especially if stored improperly. Properly stored cornmeal has a long shelf life, but over time, its quality deteriorates and it can go bad.

This means that it is possible to extend the shelf life of cornmeal, with good storage, cornmeal will keep for about a year. Commercial vacuum-packed cornmeal can last up to 25 years if stored properly. Proper storage can significantly extend the shelf life of cornmeal.

Properly stored, cornmeal will keep for at least one year after the expiration date shown in the following table. To extend the shelf life of regular cornmeal after opening, transfer the cornmeal to a sealed, airtight container, or place the original bag of cornmeal in a resealable plastic freezer bag. Place cornmeal in sealed, airtight containers or strong freezer bags. Whenever you want to use frozen cornmeal, only use what you need.

You can always store degerminated cornmeal in a cupboard or pantry. Sprouted cornmeal can be stored in the refrigerator for up to five years, as low temperatures inhibit new growth and kill any bacteria or other contaminants that may be present on the cornmeal. A bag of sprouted cornmeal with sprouted cornmeal can be stored in the pantry for up to a year if the bag is tightly closed and excess air can escape between uses; otherwise the cornmeal may become contaminated. Even unsprouted cornmeal will last well over a year in the refrigerator if stored properly, which is impressive considering this type of cornmeal only lasts a few months in the pantry.

Cornmeal will keep for months in a cool, dark cupboard, but will greatly extend its shelf life if stored in the refrigerator or freezer. If you know which type you use and how to store it, cornmeal has a very long shelf life, even from the refrigerator or freezer.

While degerminated cornmeal has a relatively long shelf life that can be extended if stored properly, it can go bad if stored incorrectly. Refrigeration Degerminated cornmeal can be a good option if you’re not sure when you’ll be using it again. Degerminated cornmeal should keep well for several months, up to a year or more at room temperature. Your cornmeal does not keep as long as degerminated, and when it expires it will be visibly rancid and will have a sour, pungent smell and taste.

On the positive side, by considering the cause, you can prevent the cornmeal from spoiling quickly, but will eventually lose its quality. As with containers, corn flour can spoil quickly if fresh air and moisture can get into it. Sometimes cornmeal spoils within days of opening the package when exposed to air, heat, or humidity. You may not be sure if the cornmeal has gone bad, but don’t worry.

Exposing frozen cornmeal to frequent temperature fluctuations causes the frozen cornmeal to spoil. After melting a batch of cornmeal, it is best not to refreeze it due to temperature fluctuations.

Don’t store cornmeal in a transparent container, every time you open the refrigerator you expose it to light which shortens its shelf life. When you open the package, take a close look at the cornmeal to see if you notice any unwanted proteins (insects) before storing it. If you open a bag of cornmeal and find movement or small foreign bodies such as mouse droppings, you should throw it in the trash.

Be aware that cornmeal that is still in its original packaging and unopened can last a long time if stored in a dry pantry or cupboard. Germinated cornmeal, for example, can be refrigerated for up to two years, doubling the shelf life of the bag if the inside of the bag is kept dry and sealed tightly, as any moisture in the bag can ruin the cornmeal. Sprouted cornmeal can last up to a year before it goes bad, while unsprouted cornmeal can go bad up to 3 months after you open the package, as the oil in corn can go rancid pretty quickly.

Whole grain cornmeal should hold quality for a couple of months, maybe six months if refrigerated or frozen after opening. On the other hand, whole grain cornmeal can only last 3 months past the expiration date if stored in the freezer. It is very important that you use cornmeal in excellent condition because your cornbread will not last longer no matter what you do if your cornmeal was already on the verge of spoilage prior to making cornbread.

Smell the bag of cornmeal. Cornmeal should have a mild to non-existent odour. It should have a faintly sweet and nutty aroma, but not be overpowering. If your cornmeal smells sour or musty, it’s a sign that it’s either rotten or has mould growing on it.
