Are Chinese Spring Rolls Gluten-Free?
Chinese spring rolls are not typically gluten-free as the wrapper is made from wheat flour. The fillings also usually include soy sauce which contains gluten and other ingredients such as oyster sauce and hoisin sauce which also contain gluten. Some restaurants or manufacturers may offer gluten-free options but it’s best to check with them for more information.
If you are ordering Vietnamese imperial rolls at Vietnamese restaurants or for takeout, be sure to verify beforehand that they are indeed using rice paper. It is possible to use the same rice paper sheets used to wrap the fresh Vietnamese spring rolls or summer rolls, however, the rolls will not turn out quite as crisp, except when you deep-fry them and enjoy them right away.

Lay down 1 rice paper wrapper on a dry cloth and place 2 tablespoons of the filling in the center of the wrapper; be careful to not over-fill the wrapper, you would have to leave 1.5 inches on each side in order to roll up your spring rolls.
Once it is submerged, the rice paper sheets are filled with ingredients like meat, vegetables, seafood, herbs, spices, sauces, etc. After the fillings, the rice papers are folded in half and sealed with eggwash. Traditional egg rolls recipes used eggs in the mixture, but most recipes no longer call for them; contemporary egg rolls are typically made from mixed meats and vegetables wrapped in a rice paper wrapping. In comparison, the egg rolls are typically thicker/larger, wrapped in thicker, sturdier wrapper.
They are called egg rolls because the wrapper is usually made from flour and eggs, and traditionally deep-fried. Although egg rolls may have high calories–partly because of their deep-frying–the egg rolls wrappers are low in calories and fat, and so they may fit into a healthy, low-calorie diet plan. They puff up when fried, becoming pockets filled with delicious, oily bubbles, making them simultaneously crunchy and chewy. Like other deep-fried foods, egg rolls are usually served with duck sauce, a sweet condiment popular at Chinese-American takeout restaurants.
An egg roll is a cylindrical, savory rotisserie made of chopped cabbage, chopped pork, and other ingredients, within a tightly wrapped, wheat-flour crust that is deep-fried in hot oil. Contrary to popular belief, eggs are not required to make an egg roll, although it does carry that word in its name. Being made with the roll, we do not have to stick it with eggs, as that pastry sticks very easily.
You can double the recipe, if you want, especially because if you are not familiar with this process, you might not roll your wrapper as thinly as you would like, so in the end, you have less egg rolls. Rolling your raw dough slightly thicker, cutting shapes, then rolling these shapes thinner is the easiest way to make your wrappers as thin as you want.
On a working surface, gently flatten the pastry squares using a rolling pin until the squares are a lot thinner (like the photo above). Then, fold your sides inwards (the pastry will be shaped like an envelope) and keep rolling, helping to press down on the top with the slurry of cornstarch.
The exact bake time will vary depending on which wrapper you are using and your specific oven, so watch your rolls closely after you fold them. Remove crispy vegan rolls from oven and serve with a side of sweet pepper sauce, Chinese garlic sauce, or a sweet-and-sour sauce. Unlike the usual Cantonese Spring Rolls, this version is baked in an oven, using a homemade, thin gluten-free vegan wrapper to make the crunchy veggie rolls (the usual wrapper options are included!). You can use store-bought spring rolls wrappers, vegan egg rolls wrappers, or make your own gluten-free dumpling wrappers, like the ones I mentioned above.

We have two fairly easy recipes using rice paper in place of a classic spring roll wrapper, and containing entirely gluten-free filling. Even though the spring rolls are wrapped with gluten-free rice paper and have just vegetables such as carrots, kale, sprouts, and similar, there is still a question about what marinade they are using. If you replace the rice flour with wheat flour when making the spring rolls, it becomes gluten-free. Store-bought Spring Roll wrappers are usually not gluten-free, since they contain all-purpose flour.
Store-bought eggs rolls that you find in the freezer aisle of a grocery store are likely also gluten-laden in their egg roll wrappers. Most Chinese food meals come with either an egg roll or a side of fried crab wontons, but both these options contain gluten. The typical wrapper for a spring roll is made from wheat – to make a gluten-free version, you will have to use Vietnamese rice paper wrappers instead.
My version of the spring rolls does not use traditional ingredients, which is what my mother usually uses in Hong Kong, or what my Vietnamese friends do for traditional Vietnamese spring rolls, or summer rolls. The tasty, chopped slivers of cured hoisin are pretty much identical to the traditional Vietnamese spring rolls (goi cuon) in that we stuff our rice paper wrappers with finely chopped veggies, vermicelli noodles, fresh herbs such as basil, and mint, but instead of pork or shrimp, we go with crunchy, meaty oyster mushrooms.
